For the lemon caper sauce
Instructions
Step 1
Preheat the oven to 350F
Step 2
In a smal bowl, combine the lemon juice, orange juice, olive oil and black pepper. Whisk until blended, then pour the mixture into a sipper lock bag. Place the fillets in the bag, shake gently and marinate in the fridge for 10 minutes.





Step 3
Transfer the fillets and marinade to a medium baking dish. Bake for 10-15 minutes or until the salmon is cooked through and the internal temperature reached 165F/75C. Remove the salmon from the oven and cover loosely with foil. Set aside
Step 4
White the salmon is resting, make the lemon caper sauce by heating the olive oil in a medium pan over medium heat. When the olive oil begins to shimmer, add the onions and saute for 3 minutes, stirring frequesntly, then add the garlic and saute for another 30 seconds



Step 5
Add the lemon juice and wine. Bring the mixture to a boil and cook until the sauce becomes thick, about 2-3 minutes, then remove the pan from heat. Add the capers and black pepper and stir




Step 6
Transfer the fillets to 2 plates and spoon the sauce over the fillet
