Fattoush is a traditional salad from northern Lebanon and considered one of the iconic dishes, after Tabbouli and Hummus.
Fattoush salad is basically a Lebanese fried bread and typically includes lettuce, tomatoes, cucumbers, radishes with the delicious zesty dressing made with extra virgin olive oil, fresh lemon juice, sumac and pomegranate molasses

250gromaine lettuce
coarsely chopped
1 cupPurslane
Leaves but not chopped
250gred tomato
cut into 1 inch slices
250gPersian cucumbers
round sliced
50ggreen bell pepper
chopped
50gradishes
thinly sliced
100gspring onions
thinly sliced
¼ cupfresh parsley
roughly chopped
¼ cupfresh mint leaves
not chopped
¼ cuppomegranate
pods
Dressing Ingredients
Instructions
Step 1
In a large skillet, heat vegetable oil on medium heat, add the pita bread and fry it for 5 to 7 minutes until are crispy and golden brown, season with salt, then set aside. (Alternatively, bake the pita bread at 220C° for 5-10 minutes.)
Step 2
In a large bowl, add the salad dressing ingredients, whisk together until the dressing is well blended.
Step 3
Add the lettuce, tomatoes, cucumbers, bell peppers, radishes, spring onions, purslane, mint and parsley to the large bowl of dressing and toss to combine.
Step 4
Sprinkle the pomegranate pods on top, then add the fried pita bread to the salad immediately before serving and gently toss again.
Step 5
Serve at room temperature, and you may drizzle pomegranate molars on each salad plate as desired.
