Step 1
1) Sauté onions in water for 5-7 minutes. Add garlic, ginger and spices. Stir until fragrant (1 minute). 2) Add can of tomatoes and oat milk. Stir until combined. Cover and bring to rolling simmer and check spices for taste. 3) Add 1 cup of red lentils and cook at medium-low heat, with a simmer until lentils are soft (20-25 minutes), stirring often. You may need to add a little water to thin sauce. 4) While lentils are cooking, place tofu cubes in a nonstick pan and fry up. (may use oil here or skip this step).
5) Once lentils are tender, add tofu and optional ingredients (peas or spinach) and heat for 5 minutes.
