Instructions
Step 1
Add 10ml of oil to a small pot and sweat off onions, mushrooms and garlic.
Step 2
Add thyme and cannellini beans to the pot. Then cover with stock and simmer gently with lid on for 25mins.
Step 3
Allow to cool slightly before you blend the soup using a hand or jug blender.
