Butterbean & Tomato Soup

Instructions

Step 1
In a large pot, heat olive oil over medium heat.
Step 2
Add chopped onion and minced garlic to the pot and sauté until the onions are soft and translucent.
Step 3
Add the drained and rinsed butterbeans to the pot and stir to combine.
Step 4
Add the can of diced tomatoes, vegetable broth, dried thyme, smoked paprika, salt, and pepper to the pot.
Step 5
Bring the soup to a simmer and let it cook for 20-25 minutes or until the butterbeans are tender.
Step 6
Using a blender, puree the soup until it is smooth and creamy.
Step 7
If the soup is too thick, add a little more vegetable stock or water to thin it out to your desired consistency.
Step 8
Taste the soup and adjust seasoning if needed.
Step 9
Ladle the soup into bowls and garnish with chopped fresh parsley (if desired).
