Instructions
Step 1
Wash the frozen peas to defrost and drain the water off.
Step 2
Good glug of oil in a pan. Add bay leaves and cinnamon stick. Cook for 2 mins.
Step 3
Add the cardamom seeds cloves and black peppercorns and a splash of mace. Cook for 2 mins.
Step 4
Add the peas and a good pinch of salt. Cook for 2 mins.
Step 5
Add the rice and cook for 3 mins until the mixture is fairly dry and starting to catch on the bottom of the pan.
Step 6
Add 1 1/2 cups of water. Bring to boil and turn the heat to a low setting (2). Leave for 10 mins.
Step 7
Add 1/2 cup water, stir and leave for 10 mins on a low heat. Keep checking, adding small quantities of water and cooking on low until the rice is fully cooked.
Step 8
Turn off the heat and leave on the hob for 10 mins to fluff up.
