Instructions

Step 1
Place chicken cubes, onion, carrots, sweet potatoes, 3 tsp of garlic, ginger and creole seasoning in a medium bowl. Mix well.
Step 2
Heat oil on medium. Add remaining garlic and cook for 1 minute. Add curry powder and cook for 1 minute.
Step 3
Add chicken mixture and 1/3 c water. Simmer for 10-15 minutes covered or until chicken is cooked.
Step 4
Add pepper pieces and cook 5 minutes.
Step 5
Add coconut milk, brown sugar, and bullion cube and cook util sauce thickens (about 10 minutes).
Step 6
Enjoy over rice!
