Instructions
Step 1
Slice Anaheim peppers into half, wash and drain. Dice garlic, ginger and slice scallion, set aside.
Step 2
Marinate ground seasoned pork sausage with diced garlic, ginger, sugar, egg, chopped scallion, black pepper powder(if you use plain ground meat, add salt to season accordingly), mix meat with a spoon or chopsticks in one direction for a few minutes until it comes pasty, let it sit.
Step 3
Stuff a few table spoons of marinated meat inside the socket of Anaheim pepper halves, until it’s fully covered.
Step 4
Heat up cooking oil in a pan, place stuffed pepper halves (with the meat side down) inside the pan one by one once oil gets heated, simmer them on medium heat until both sides turn golden brown and charred.
Step 5
Pour the sauce over peppers, and simmer it on medium heat for 5 minutes until the sauce dried out. Remove from the heat and transfer to a plate. Garnish with chopped scallion, serve warm with a bowl of rice, enjoy!
