Persian barley and herb stew

Ingredients
8 servings
1onion
large, chopped
4 Tbsoil
4cloves garlic
minced
2 tspturmeric
2 tspcumin
1.2 Lchicken stock
or veggie
700gred kidney beans
undrained
1 cpearled barley
soaked
½ cwhite basmati rice
rinsed
0.5 Clentils
soaked
¾ cherbs
2 cspinach
0.5lemon
juiced
Garnish
Instructions
Step 1
For the garnish, caramelize sliced onions over medium-low, then add garlic and mint. Cook until fragrant and drain to remove excess cooking oil
Stew
Step 2
Sweat chopped onion over medium about 10 minutes, then add spices and garlic. Cook until fragrant and add stock
Step 3
Add barley, rice, and lentils, cook on low until grains are just tender, about 25-30 minutes
Step 4
Add herbs, spinach, and beans, continue to cook another 5-10 minutes
Step 5
Once spinach has wilted and beans are cooked through, remove from heat and add lemon juice to taste. Adjust seasoning as necessary
For serving
Step 6
Ladel stew into a bowl and top with a dollop of yogurt, caramelized onions, and a drizzle of EVOO
