Instructions
Step 1
Heat the oil in a large non-stick saucepan, add the onion and gently fry for 5 minutes, or until softened and lightly browned, stirring regularly.


Step 2
Add the mushrooms and garlic and cook for 5 minutes, stirring regularly.


Step 3
Crumble in the stock cube and pour in 600ml water. Season with salt and lots of ground black pepper. Bring to the boil, then reduce the heat and simmer for 10mins.

Step 4
Remove from the heat and blitz until smooth

Step 5
Stir in the milk, return to the heat and adjust the seasoning to taste. Add a little extra milk or water to reach your preferred consistency and warm through before serving.
