Ingredients

750gpork fillet
tenderloin, visible fat removed, cut into chunks

2red onions
halved and thinly sliced

2garlic cloves
thinly sliced

1red chilli
medium-hot, deseeded and finely chopped

2 Tbspred wine vinegar

1 tsppaprika

4peppers
any colours, deseeded and sliced

500gbaby potatoes
or new, scrubbed

50gpassata
blended with 250ml boiling water

saffron
optional

fresh coriander
chopped, to serve
Instructions
Step 1
Preheat your oven to 160°C/fan 140°C/gas
Step 2
Spray a large non-stick casserole pan with low-calorie cooking spray and place over a medium heat.
Step 3
Season the pork and sear in batches until lightly coloured, transferring each batch to a plate.
Step 4
Spray the pan with more low-calorie cooking spray, add the onions and fry for 5 minutes or until softened and lightly coloured, stirring often.
Step 5
Add the garlic and chilli and cook for 1 minute, then stir in all the remaining ingredients and return the pork to the pan.
Step 6
Cover and cook in the oven for 1 hour, then stir, cover again and cook for another hour.
Step 7
Scatter over the coriander and serve hot.
