Chickpea and Chorizo Stew

A delicious warming stew which is simple to make. Great served with crusty wholemeal bread. The recipe can be easily doubled or trebled to serve a larger crowd.

Instructions
Step 1
Heat the oil in a large deep pan and fry the onion and carrot for 10 minutes on medium heat.
Step 2
Add the chorizo and garlic and fry for a further 10 minutes, stirring frequently.
Step 3
Add the tomatoes and 400ml of water to the pan and bring to a simmer. Cook for 15 minutes.
Step 4
Add the chickpeas (including the water), the smoked paprika, black pepper and the spinach and cook for a further 10 minutes.
Step 5
Ladle into bowls and serve with crusty bread.
