½ cupred bell pepper

½ cupyellow bell pepper

1 tsppaprika
1 tspchili powder
½ tsponion powder
1 tspsalt
to taste
½ tspblack pepper
to taste
1 ½ cupslow sodium broth
2 Tbspolive oil
3 clovesgarlic
grated
10 ozshredded Colby jack cheese
½ cupfresh cilantro
chopped, or Italian flat leaf parsley, for garnish
2 cupscauliflower rice
Instructions

1 lb cooked lean ground beef
Step 2
1 cup washed long grain or jasmine rice
Step 3
1 can diced tomatoes with chilis
Step 4
1/2 cup red bell pepper, chopped
Step 5
1/2 cup yellow bell pepper, chopped
Step 6
1/2 small red onion, chopped
Step 7
1 tsp paprika
Step 8
1 tsp chili powder
Step 9
1/2 tsp onion powder
Step 10
1 tsp salt, to taste

1/2 tsp black pepper, to taste

1 1/2 cups low sodium broth

2 tbsp olive oil

3 cloves grated garlic

10 oz shredded Colby jack cheese

1/2 cup chopped fresh cilantro or Italian flat leaf parsley, for garnish
Step 17
Cook ground beef. Add all the ingredients to a baking dish (except for the cheese). Mix everything together. Cover and bake at 400 degrees for 45 minutes. Remove from the oven, add cheese and bake for another 10 minutes or until cheese is melted.
