125mlwater
125mlchicken broth
Instructions
Step 1
Boil saltfish for 10mins and drain off the salt water ( 2ce)
Step 2
Add the plain cod fillet to the saltfish and boil together, drain and flake it and set aside
Step 3
Chop the peppers, carrot, onions, spring onions, chilli, garlic, ginger, capers. set aside.
Step 4
Peel and chop up bread fruit and plantain. Season plantain chops with paprika, grated some ginger, black pepper, and a pinch of the salt. set aside
Step 5
Combine, coconut flakes, almond flour and wheat flour in a bowl, add 1 tbs extra virgin olive oil, water, garlic powder and a pinch of the salt. Mix well and knead to form a dough.
Step 6
Form the dough in any shapes and sizes of your choice; place them in a pot of boiling water and cover to cook for 10-15mins on low heat
Step 7
Place the plantain chops in an air fryer for 10 mins at 170degrees Celsius
Step 8
In a sauce pan, add 1 Table spoon of Extra virgin olive oil, 1 table spoons each of the choped peppers, 1 table spoon of onions, garlic and ginger. fry a bit and add the chicken broth. stir and add in the chopped breadfruit. Cover and cook for 5-10mins or till its done. set aside
Step 9
In a sauce pan, add extra virgin olive oil, garlic, ginger, onions and fry a bit; add chopped spring onions, carrots, chilli, capers stir to fry a little.
Step 10
Add in the fish flakes, stir to combine; add the chopped tomatoes, peppers, black pepper. Stir and simmer for 3-5mins. add in dried thyme and stir.
Step 11
serve this dish as desired.
