Sticky Stir-fried Beef with Greens and Noodles

Ingredients

500gsirloin steak

sea salt

¼ cupcornflour

Rice bran oil
for cooking

1 tablespoonfresh ginger
grated

3cloves garlic
crushed

1red onion
medium, thinly sliced

4 stemsbroccolini
sliced into thinner pieces

⅓ cuproasted cashew nuts
roughly chopped

Step 1
Stir the cornflower and water together until smooth, then. Stir in the remaining ingredients. Set aside.
Stir Fry
Step 2
Slice the steak on the diagonal, against the grain, into long, thin strips. Season with salt then too with the cornflour, making sure each piece is well coated and separated.
Step 3
Heat 1 tablespoon of oil in the pan or wok and when very hot cook the steak in batches, single layer, 10 seconds each side. Transfer to a plate once cooked
Step 4
Add more oil to the pan as needed. Stir in the ginger and garlic, saute for 10 seconds, yhen add red onion and broccolini. Stir fry for a few mins until crisp-tender, adding a splash of water if needed.
Step 5
Give the sauce a stir then add to the pan, stirring constantly for 2 mins until thick and glossy. Add the steak and any juices to the pan and turn until every piece is coated in the sauce. Top with cashew nuts to serve.
