For The Chicken
kosher salt
2 Tbspolive oil
3 Tbspgreek yogurt
1 Tbspthyme
1 Tbsppaprika
2 ½ tspground coriander
¼ tspcayenne
½ tspcumin
1 tspgarlic powder
3 clovesminced garlic
0.5lemon
Juice of, + zest
1.5 lbschicken thighs
For the Tzatziki
1cucumber
1 cupgreek yogurt
3 Tbspmayo
1 TbspFRESH dill
old stuff will taste like chalk, trust
1 Tbspdried parsley
you can skip this if you want

juice and zest
3garlic cloves
adjust based on preference - this is super garlicky

For the Greek Rice
1 cuprice
0.5bouillon cube
1 Tbspolive oil
2garlic cloves
sliced
0.5juice of lemon
1 ½ Tbspfresh dill
2 cupswater

For the Greek Salad
Instructions
Greek Chicken
Step 1
Add chicken and all marinade ingredients to a bowl, cover, and place in the fridge at least 2 hours prior to cooking, preferably overnight.
Step 2
Heat a nonstick skillet over medium-high heat and place chicken skin side down. Sear for 3-4 minutes until golden brown.
Step 3
Flip the chicken and place 2 tbsp water in the pan, cover to continue steam cooking the chicken for 6 ish minutes or until done. Set aside to rest before serving.
Grek Salad
Step 4
Chop all of your veggies and add to a bowl. Mix.
Step 5
Add your feta, olive oil, lemon juice, red wine vinegar, and season to your taste. This salad tastes better if you let it sit for a bit before enjoying.
Tzatziki Sauce
Step 6
Grate the cucumber into cheesecloth (or a fine strainer) and squeeze out all the liquid you can, this stops the tzatziki from getting too runny.
Step 7
Add everything to a bowl and mix - this also tastes better if you let it sit for a bit before eating!
Greek Rice
Step 8
Wash your rice.
Step 9
Add rice and all ingredients above to a rice cooker or pot. Stir well.
Step 10
Cook over high heat until your water gets to a rolling boil, then kill the heat to a low simmer and cover for 13-15 minutes.
Step 11
Uncover and fluff the rice.
