STIR-FRIED POLITIKI SALAD

This recipe was originally introduced to our cuisine by the Greeks of Constantinople, Politiki meaning something that comes from poli, which literally translates from the Greek as ‘city’ but is also used to refer to Constantinople (now Istanbul). It’s a ?ery popular winter dish, normally ser?ed raw and cold, but one of our chefs had the brilliant idea of transforming it into a stir-fry. Try it as a side dish with our Beef Fillet Kontosou?li or Caramelized Iberico Pork Chop.

Ingredients

6 servings

1white cabbage
shredded
2red peppers
long, cored, deseeded and cut into very thin strips
1 large carrot, peeled and shredded
1carrot
large, peeled and shredded
1celery stick
very thinly sliced
1red onion
cut into very thin strips
drizzle of extra virgin olive oil
extra virgin olive oil
drizzle of white balsamic vinegar
white balsamic vinegar
1 bunch of flat leaf parsley, chopped
1 bunchflat leaf parsley
chopped
pinch of white sesame seeds
white sesame seeds
black sesame seeds
salt
salt

Instructions

Step 1
Mix all the vegetables together in a bowl so that they are well combined.
Step 2
Heat a large frying pan or wok until very hot, add the olive oil and then stir-fry the vegetables for about 1 minute. Drizzle with the white balsamic vinegar and remove the pan from the heat. Add the chopped parsley and season with salt.
Step 3
Transfer to a serving bowl and sprinkle the sesame seeds over the top.
Step 4
Serve immediately
