Instructions
Step 1
Boil conch for at least 15 mins until tender and reserve the “conch water”
Step 2
Dice onion, green bell pepper, conch and place in a medium sized bowl.
Step 3
Combine flour, baking powder, salt and thyme in a small bowl, then add to the medium sized bowl.
Step 4
Add conch water to veggie and dry ingredients mixture, more liquid may be needed. See notes.
Step 5
Add tomatoe paste and combine all ingredients.
Step 6
Fry until golden brown. Fry each side for 2-3 minutes depending on how thick the batter is.
