Instructions

Step 1
In a small pan, add tomatoes and a small amount of oil from sun-dried tomato jar and heat over medium heat
Step 2
Add spinach,half the fresh parmesan cheese, and spices to pan. Cook until spinach is wilted
Step 3
Remove vegetables from pan and crack one egg in to the same pan used to cook vegetables and cook until your desired consistency (I like over medium)
Step 4
Place one piece of thawed ezekial bread in the toaster
Step 5
Place avocado on toast and top with vegetables and remaining parmesan cheese. Squeeze lemon juice from the quartered lemon on top. Garnish with red pepper flakes.
