Instructions
Step 1
Slice the chicken into cubes, add 2 tsp of each of the soy sauce (dark and light), 2 tsp garlic powder and 1 tsp black pepper. Mix till combined snd set aside
Step 2
Next get a bowl and mix together 2 tsp of each of the soy sauce (dark & light), 30g tamarind paste, 1 tsp fish sauce, 1/2 lime juice, 2 tsp brown sugar and 1/2 cup water. Set aside for later
Step 3
Get a large bowl, place your rice noodles in with boiling water and let it sit for 4-5 mins (follow the packet instructions)
Step 4
Get a wok or pan on medium heat, add cooking spray then cook the chicken for 5 mins till golden brown and set aside
Step 5
In the same pan add chopped garlic, shallots and green onion. Cook for 30 seconds then add 2 eggs to the side, keep stirring till scrambled then mix with the veg
Step 6
Next add the cooked rice noodles with the sauce you made earlier, give it a good mix before adding the cooked chicken with crushed peanuts, green onion and bean sprouts
Step 7
Give it a final mix then garnish with more peanuts and lime juice
