Ingredients
7 servings

½ tspCumin seeds
ground

½ tspmustard seeds
ground

½ tspcoriander seeds
ground

2onions
large, chopped

3garlic cloves
finely chopped

1 Tbspground ginger

2 tspground turmeric

1 tspgaram masala

200gdried red lentils
uncooked, rinsed

1 canpassata
1can reduced fat coconut cream

500mlvegetable stock

2 handfulsfresh spinach
washed

1 tspolive oil
or coconut

0.5juice of lemon

0.5red chili
optional
Instructions
Step 1
Rinse lentils and set aside to drain
Step 2
Heat oil over medium heat in large pot
Step 3
Cook onion for 5 minutes until soft
Step 4
Add garlic ginger and chili if using and cook until fragrant
Step 5
Add ground spices, turmeric and garam masala and cook until fragrant
Step 6
Add lentils, passata, coconut cream and stock, salt and pepper if needed. Cook 20-25 minutes on low-medium heat until reduced and thick
Step 7
Stir in lemon juice and spinach and stir until wilted
