This is a dish I love to make either with leftover chicken, leftover rotisserie chicken, or even with chicken I’ve yet to cook. Peel, dice/cube potatoes, place in microwave safe bowl, cover in water and microwave for 8-9 minutes to par cook them. Chop up chicken. In a large skillet, sauté chicken, diced onion and corn in about 5 tablespoons of extra virgin olive oil over medium to medium high heat. Drain water off potatoes and add the. to the skillet. Turn up heat, stir occasionally until you see potatoes and corn beginning to brown. Add chicken stock, black pepper to taste. Bring to simmer and cover. Stir occasionally. When potatoes are at desired softness turn off heat and stir in fresh parsley. Fry yourself an egg and serve over mound of hash. Optional, add a dash or two of cayenne pepper to finish.
