Step 1
To make the dough, first mix the yeast and sugar in the water. Add the water mixture with the rest of the ingredients and knead until the dough becomes smooth and soft. Cover the dough in a bowl, and let the dough rest for 1 hour.
Step 2
While the dough is resting, start making the scallion oil.
Step 3
First heat up the oil on a medium flame.
Step 4
Cut the stock of the scallion and only use the green leaf. Chop the scallion finely, and in a bowl add all the other dry mixture with the scallion.
Step 5
When the oil is heated, pour it over the scallion. Mix it well.
Step 6
After an hour take the dough out, and sprinkle some flour on a clean surface and roll the dough thinly (1cm) in a rectangle shape (40x30cm). Spread the scallion oil on the dough evenly (add less oil more scallion).
Step 7
From the longer side of the dough, give the dough a 3 fold. Cut the dough into small pieces (5cm).
Step 8
Put 2 layers one top of the other. Use a chopstick and press it length way over the layers. Hold both edges and pull to stretch it by 5cm, then hang it on a chopstick in the middle. Press both edges to close, then using the chopstick and twist the dough. On a surface press the dough with the chopstick into a bun like shape, then slide the chopstick out.
Step 9
Let the bun rise for about 15 minutes.
Step 10
They can be steam or pan fry to get a golden crust.
Step 11
To stream the bun, place a round parchment paper with small holes on the steamer, then place the buns on it, make sure to keep them apart at least one inch.
Step 12
Steam the buns over medium to high flame for about 15 minutes until they are cooked.
Step 13
To make the buns on a fry pan,add tsp oil then place the bun on the hot pan. After 1 minute, add about 1 cup water or until the buns are halfway covered with the water. Cover the pan with a lid and cook them on a medium flame until all water is absorbed and the crust comes to your desired color.
