Instructions

Step 1
Grate the carrots and squeeze all the water out. (I put grated carrots in a tea towel and squeeze together)
Step 2
Heat ghee in a deep pan, add grated carrots.
Step 3
Cook on a low heat until the carrots have softened up. Keep stirring.
Step 4
Heat the milk in the microwave for 2 minutes whilst the carrots are cooking.
Step 5
Once the carrots have softened, add the milk and mix well. Now put the heat up to high and let the milk evaporate.
Step 6
Once the milk has evaporated, add the sugar and cardamom powder. Mix well until the sugar has dissolved.
Step 7
Switch off the flame and garnish with nuts.
Step 8
Enjoy warm with vanilla ice cream šŸ˜Š
