Instructions

Step 1
Heat the vegetable oil in a large wok or skillet over medium-high heat. Add the diced tofu and cook for 5-6 minutes, or until crispy and golden.
Step 2
Add the broccoli, carrots, bell peppers, and red onion to the wok. Stir-fry for 3-4 minutes, or until the vegetables are tender-crisp.
Step 3
Add the garlic and ginger to the wok and stir-fry for 1-2 minutes, or until fragrant.
Step 4
In a small bowl, whisk together the soy sauce, honey, and cornstarch to make the sauce. Pour the sauce into the wok and stir-fry for 1-2 minutes, or until thickened.
Step 5
Serve the stir-fry over a bed of cooked rice or noodles. Enjoy
