Instructions

Step 1
In a shallow dish, combine half the olive oil, soy sauce, honey, mustard and half the lemon juice. Add the salmon and coat all over
Step 2
Drain and rinse the butter beans. Place in a saucepan with the garlic, remaining oil, chilli flakes, remaining lemon juice and lemon zest and gently heat through.
Step 3
Roughly crush the beans using a vegetable masher or fork, then stir in the spinach and season with salt and freshly ground pepper. Gently heat until the spinach wilts.
Step 4
Meanwhile, heat a non-stick frying pan or grill pan until hot. Cook the salmon for 2-3 minutes on each side, or until just firm and pink, adding the tomatoes during the last 1-2 minutes to warm them through,
Step 5
Serve the salmon on the beans, with the tomatoes and extra lemon wedges if desired.
