Ingredients

2 cupsbrown rice
cooked, short grain, or 1/2 cup raw rice
0.5onion
1 tspcumin seeds
3garlic cloves
0.5 inchfresh ginger
1carrot
medium
2green onion
½ cupPineapple
chopped, fresh or frozen or tinned
3 Tbspcooking oil
½ tspsoy sauce
salt
as needed
pepper
as needed

Instructions
Step 1
For instant pot. 2 cups brown rice, 2 cups water (500ml). Add salt pepper & stock cube. Set pressure cooker for 4 minutes natural release. To job cook rice, add 1 & 1/2 cup uncooked rice to 3 & 1/4 cup water and cook on medium flame till all water is gone and rice looks cooked. Or skip this step if you have ready cooked rice cold.
Step 2
Cool cooked rice completely before using in Fried Rice, left over rice is perfect for this recipe.
Step 3
Finely chop onion, carrot, green onion, green chili and keep aside.
Step 4
Mince garlic cloves and finely chop Ginger and keep all ingredients ready.
Step 5
In a large frying pan add cooking oil. When oil is hot add cumin seeds, minced garlic, and a spring onion, finely chopped ginger, and fry for a minute ( do not burn cumin seeds ).
Step 6
Add soy sauce and fry for a second.
Step 7
Add finely chopped onion and fry for 3-4 mins or till onions turn translucent. Add chopped carrot and saute till carrot is well cooked.
Step 8
Add cooked & cooled rice and mix everything together. Add chopped pineapple pieces, salt, pepper and mix everything once.
Step 9
Turn off flame and when fried rice is still hot, add chopped green onion and mix everything together.
Step 10
Serve warm!

Use different type of veggies like beans, broccoli along with carrot if needed.
Step 13
Use 2 tbsp of Raisins along with nuts if you like that sweetness in your fried rice. Make sure to fry raisins in a tbsp of oil before adding to fried rice.

For vegetarian option, use soft cottage cheese in place of Tofu as topping.
