Ingredients

3 lbchicken thighs
or other dark meat, cooked and shredded

1can corn
undrained

1can sliced carrots
undrained

1can dark red kidney beans
rinsed and drained

1can black beans
rinsed and drained

1can stewed tomatoes
undrained

1can diced tomatoes
undrained

0.75 bunchcelery
chopped

1onion
large, chopped

1 bunchcilantro
chopped

42 ozchicken broth

2 packagestaco seasoning

garlic
chopped

olive oil
Instructions
Step 1
Sweat onions, celery, and garlic in olive oil in large pot.
Step 2
Add all cans, broth, and taco seasoning.
Step 3
Simmer 1 hour.
Step 4
Add chicken, cilantro, and salt and pepper. Go heavy on the salt and pepper.
Step 5
Simmer until chicken is hot and soup is happy.
Step 6
Top with these options: shredded cheddar, sour cream, sliced avocado, and/or tortilla chips.
