Indian-ish Saag with Feta

Instructions

Step 1
Warm olive oil over medium heat
Step 2
Add coriander and other whole spices (cumin, red whole chile) stir for about 2 mins
Step 3
Add onion and cook until translucent, 5-6 mins
Step 4
Stir in ginger + garlic, jalapeño, cook 1 min
Step 5
Begin adding spinach, cook until just wilted, 4-5 mins
Step 6
Add in 1/2 cup warm water and ground spices, bring to simmer
Step 7
Add lime, gently fold in feta, careful not to break the cubes
Step 8
Cook for 5-7 mins until feta is softened and soaked up some sauce
Step 9
Optional chonk: In a small pan, heat 2 tbsp oil or ghee, add cumin seeds and cook 1 min. Turn off heat and add red chile powder and asafetida. Pour into main pot once done
Step 10
Serve over rice
