Butter Lettuce Tacos
Guacamole pairs perfectly with this light take on tacos.

Ingredients
6 servings
ground beef
1 headbroccoli
diced
1 headcauliflower
diced
1can corn
1red bell pepper
diced
1 headbutter lettuce
washed and leaves kept whole
salt
pepper
taco seasoning
For the guacamole
Instructions
Step 1
Prepare guacamole first (so you can snack on it with chips while preparing the rest of the meal)
In a small bowl, smash avocados with a fork.
Mix in diced tomato, onion, and cilantro.
Add lime juice. Mix.
Add salt, chili flakes and garlic to taste.
Step 2
Wash and prep all veggies.
Step 3
Cook ground beef in a pan. Once completely cooked through, season as you like (Susie Q's or taco seasoning or salt and pepper).
Step 4
Remove cooked meat and place in a container that you will store leftovers in (to save on clean up later). Poor leftover grease out of the pan.
Step 5
Add olive oil to the same pan and cook diced veggies and corn.
Step 6
Add meat back into the pan to warm.
Step 7
Place 3 or 4 whole lettuce leaves on each plate and fill with meat and veggies. Top with guacamole and serve
