1. Soak woodear.

2. Prepare ingredients. Blanch those that can’t to be cooked quickly (like woodear for 3, wide vermicelli for 8min). Air fry potatoes (cut into thick sticks) and eggplant for 10min on 400F. Stir those that’s better caramelized a bit (like mushrooms). Thinly slice tender vege like celeries.

3. Stir fry red pepper (cut into small pieces) and peppercorn on medium until fragrant, stir in garlic (roughly chopped), green onion and ginger (cut into small cubes), stir in seasoning on low until red oil comes out.
Step 4
4. Mix in all ingredients with the longest cooking ones first.
Step 5
5. Stir in celeries and cilantro (if using).
Step 6
6. Stir in sesame oil.
Step 7
7. Garnish with sesame.
