Ingredients
4 servings
low-calorie cooking spray
500gchicken breast
skin and visible fat removed, cut into strips
6spring onions
trimmed and chopped
3garlic cloves
finely chopped
2 cmroot ginger
piece, peeled and finely chopped
½ tspchinese 5-spice
¼ tspdried chilli flakes
100gbaby corn
each cut into 3
0.5green pepper
deseeded and sliced
2 tspwhite miso paste
1 x 400gtin black beans
drained, rinsed, and roughly mashed, make sure you use tinned, not dried
4 Tbsplight soy sauce
1 Tbspwhite rice vinegar
100mlwater
75gmangetout
0.5red pepper
deseeded and sliced
Instructions
Step 1
Spray a wok or frying pan with low-calorie cooking spray and place over a high heat.
Step 2
Add the chicken strips and stir-fry for 2-3 minutes until lightly browned, then add the spring onions, garlic, ginger, 5-spice and chilli flakes and stir well.
Step 3
Add the vegetables and stir-fry for another 3-4 minutes.
Step 4
Stir in the miso paste and the crushed beans, followed by the soy sauce, rice vinegar and water.
Step 5
Bring to a simmer and cook for 2 minutes
Step 6
Check chicken is cooked through and serve with noodles
