I love burritos and hands down, this is the best one I’ve ever made!
We’ve got smokey veggies, beans and two salsas, SO GOOD! 🥰

RECIPE (2 servings, 25min prep time):
-1 onion
-1 bell pepper
Cut in slices.
Sautée the onion 4-5mins.
Add the pepper and cook until softened.
-1 Tsp cumin and paprika
-salt to taste
-1 can (220g) kidney beans
Keep frying on medium heat
Green salsa:
-1 bunch cilantro or parsley
-2 cloves garlic
-1 green chili
-juice if 1/2 lime
-4 Tbsp vegan Mayo
Blend until smooth.
Red salsa:
-1 red onion, chopped
-1/2 cup crushed tomatoes
-salt and pepper to taste
-1 Tbsp vinegar
-a pinch of sugar
Else:
-2 tortillas
-optionally: cooked rice
Fill your burrito.
Roll it up and grill each side for 1-2mins.
