Finely chop tomato and red onion

Thinly slice jalapeno

Roughly chop coriander

cut fish into 2cm wide wedges

Mix flour (2tbsp), texmex, and salt in deep plate. Turn fish in flour until completely covered.

Heat a splash of oil in large frying pan over med heat. Fry fish for 2-3 min per side, until cooked through
Cajun Mayo
Step 7
While fish is frying, mix the mayo, cajun blend, and a splash of water in a bowl
Step 8
Mix in tomato, red onion, half coriander, and lime juice. Season with salt and pepper
Step 9
Mix salad with lime juice and 1 tbsp of cajun mayo
