Instructions
Step 1
Whisk eggs, cream, milk, vanilla and 3 tbsp caster sugar in a jug.
Step 2
Butter bread slices and spread thinly with jam, then slice diagonally.
Step 3
Arrange half the bread in a buttered ovenproof dish, then sprinkle with half the blueberries and lemon zest. Repeat.
Step 4
Pour egg mixture over the bread, ensuring it all gets coated. Push the bread down gently into the custard if any has been missed. Sprinkle with demerara.
Step 5
Leave for 30 minutes.
Step 6
Bake in 180c oven for 35-40 minutes until custard has set.
