Moroccan chicken traybake
If you can’t find ras el hanout, it is easy to make your own. Mix together the following:
1 tsp ground coriander 1 tsp ground cumin
1 tsp smoked paprika
1/2 tsp ground cinnamon 1/4 tsp ground turmeric

Ingredients
1 servings
5 ½ tspolive oil
5 ½ tspras el hanout
1red onion
peeled and cut into wedges
1red pepper
deseeded and sliced
1garlic
clove, peeled and crushed
160gskinless chicken thigh fillet
cut into large chunks Salt and black pepper
coriander
Small, leaves torn
15gtoasted flaked almonds
30gyoghurt
such as greek, natural, soya
Instructions
Step 1
Preheat the oven to 200oC. Combine the oil, ras el hanout, onion, pepper, garlic and chicken into a large bowl, season
Step 2
with salt and pepper and toss everything together to coat. Tip everything into a roasting tray and roast for 40 minutes, shaking the tray occasionally during cooking.
Step 3
Scatter over the coriander and flaked almonds and serve with the yoghurt.
