Moroccan chicken traybake

If you can’t find ras el hanout, it is easy to make your own. Mix together the following: 1 tsp ground coriander 1 tsp ground cumin 1 tsp smoked paprika 1/2 tsp ground cinnamon 1/4 tsp ground turmeric

Instructions

Step 1
Preheat the oven to 200oC. Combine the oil, ras el hanout, onion, pepper, garlic and chicken into a large bowl, season
Step 2
with salt and pepper and toss everything together to coat. Tip everything into a roasting tray and roast for 40 minutes, shaking the tray occasionally during cooking.
Step 3
Scatter over the coriander and flaked almonds and serve with the yoghurt.
