1.5 lbsweet Italian sausage
1 tablespoonolive oil
2 conion
chopped
½ ccelery
chopped
1carrot
medium, peeled and chopped
½ teaspoonfresh garlic
minced
¼ cupgreen bell pepper
chopped
1 x 28 ozcan crushed tomatoes
2 cupspotatoes
diced
5 cupswater
1 x 14.5 ozcan chicken stock
½ teaspoonbasil
½ teaspoonoregano
½ teaspoonitalian seasoning
2 cupszucchini
chopped
2 tablespoonsfresh parsley
minced
½ cupspaghetti
thin, broken into 1/2 inch pieces
grated parmesan cheese
salt
pepper
Instructions
Step 1
In a soup pot fully cook sausage, breaking up with a fork. Drain and discard excess fat. Set sausage aside.
Step 2
Heat oil in the pot. Add onion, celery, carrot, garlic, and pepper. Cook until tender (about 3 minutes).
Step 3
Return sausage to the pot along with the tomatoes, potatoes, water, chicken broth, basil, oregano, and Italian seasoning. Simmer, covered, for 10 minutes.
Step 4
Add zucchini, parsley, and pasta. Cook until pasta is done (about 7 minutes). Season to taste with salt and pepper.
Step 5
Spoon into bowls and serve sprinkled with cheese.
