Lemon Ricotta pasta

Instructions

Step 1
In a bowl, combine ricotta, oil, cheese, lemon juice and zest. Season with salt, pepper and chili flakes. Set aside.
Step 2
In a large pot of salted boiling water, cook pasta according to al dente. Reserve 1 cup pasta water, drain and return pasta to pot.
Step 3
Add ricotta mixture, parsley and reserved pasta water to pasta and toss
Step 4
Check for seasoning. Serve with more cheese and a drizzle of olive oil.
