Instructions
Step 1
In a pan, heat some oil over medium heat. Add the onion and cook until softened.
Step 2
Add the garlic, ginger, cumin, coriander, turmeric, and cayenne pepper. Cook for another minute, or until fragrant.
Step 3
Add the chickpeas, chopped tomatoes, and water. Bring to a boil, then reduce heat and simmer for 10 minutes.
Step 4
Add the baby spinach and stir until wilted.
Step 5
Season with salt and pepper to taste. Serve hot with rice.
