Instructions
Step 1
Add the onions to a pan with a splash of oil on medium and cook for a few minutes before adding the garlic, ginger and chilli
Step 2
Soften these before adding the sweet potato cubes to the pan
Step 3
Add the tomato puree and mix well before adding in the spices. Cook for 2-3minutes before adding the coconut milk.
Step 4
Add the chickpeas once the sweet potato is tender. Add the spinach next and stir through.
Step 5
Serve with fresh coriander, rice and a dollop of coconut yoghurt
