Instructions
Step 1
Saute onions, garlic, ginger and jalapeno for 5 minutes over medium heat. Add bay leaf.
Step 2
Add tomato sauce, saute for 5 minutes.
Step 3
Add spices and stir to combine. Add veggies, chickpeas, coconut milk. Stir and cook for 10 minutes.
Step 4
Serve with basmati rice.
