Easy Japanese Chicken Curry

This is an easy and quick, home-style recipe that my family enjoys, especially my kids. This Japanese chicken curry is an ultimate comfort food. It’s loaded with veggies and everything is cooked in one pot, ready in 30 minutes! Who doesn’t like that? Enjoy!

Instructions
Step 1
Heat oil in a pot over medium high.
Step 2
Sauté chicken, onions, carrots, mushrooms till slightly golden, about 5 minutes.
Step 3
Add potatoes and water. Bring to a boil. Simmer for 10 minutes, or till potatoes are cooked through (see if a fork can easily go in).
Step 4
Add zucchini and Japanese curry mix. Simmer for 5 - 7 minutes. Stir frequently. Curry mix will melt and thicken. Add a little bit water if it gets too thick.
Step 5
Top with black peppers.
Step 6
Serve over hot rice. Enjoy!
