Ingredients

The Chilli

500gturkey mince
7% fat

400gchopped tomatoes

2 Tbstomato puree

red kidney beans
280g, drained

1red bell pepper
medium

1carrot
large, peeled

1brown onion
large

2garlic cloves

125gbaby spinach

1vegetable cube

½ tspground black pepper

1 tsppaprika

1 tspchilli powder

Preparations
Step 1

Finely chop the onion. Dice the pepper & carrot. Mince or chop the garlic.






The Chilli
Step 2

Place the cooking pot on medium heat, apply cooking spray, or your preferred cooking oil.


Step 3

Add the minced turkey to the pan with a generous pinch of salt, occasionally stirring for 8 - 10 minutes, or until cooked.


Step 4

Remove mince with a slotted spoon and set aside, leave the juices in the pan!


Step 5

Add the onion and garlic to the pot, cooking for a couple of minutes to soften.


Step 6

Add the carrots, cooking for 5-10 minutes. Add the pepper just as the carrots begin to soften.


Step 7

Add the chopped tomatoes. Once heated through, add the tomato purée & vegetable cube.



Step 8

Stir in the ground black pepper, chilli powder, paprika & salt.




Step 9

Add the baby spinach, once wilted, reduce heat to medium/low.

Meanwhile… La Pasta
Step 10

Cook the spirali (or your pasta of choice), 1-2 minutes less than instructed on the packaging. Drain.

Back to the Chilli…
Step 11

Stir the turkey & kidney beans into the chilli pot, cook for 3 - 5 minutes.

Step 12

If (like me) you are not using a big cooking pot, you may wish to set the pasta aside, and half the chilli into 2 saucepans before adding the pasta.
Step 13

Add the pasta to the chilli, cooking for an additional 3-5 minutes - or until the pasta has finished cooking, and absorbed some of the water from the chilli sauce.
Serve & Enjoy
Step 14

Plate your amazing creation… recommend topping lightly with cheese, and maybe even a side of garlic bread (if you’re pushing the boat out).
Step 15

Store in the fridge for up to 5 days. Or you can put it in the freezer to enjoy much later, simply take it out, let it thaw and reheat.
