Instructions
Step 1
Preheat oven 200. Oil 12cm X 25 cm loaf pan. Line with baking paper
Step 2
Place lentils, rice, and stock in saucepan, bring to a boil. Reduce heat and simmer for 40 minutes
Step 3
Meanwhile, place walnuts on a baking tray and roast for 4 minutes or until golden. Cool & chop. Reduce oven to 160/325
Step 4
Heat oil in a frying pan, cook onion and celery until soft. Add garlic and apple, cook for 5 minutes. Remove from heat.
Step 5
Transfer lentil mixture to a large bowl with walnuts and onion mixture
Step 6
Combine linseed with 1/2 cup water until it becomes gel like. At to lentils with oats and thyme. Season with salt and pepper. Spoon mixture into lined pan and smooth the surface
Step 7
Whisk ketchup, maple syrup, and balsamic vinegar in a small bowl. Brush half over the loaf. Cover with foil
Step 8
Bake for 40 minutes. Remove foil, brush remaining glaze. Bake for a further 20 minutes. Transfer pan to a wire rack and allow to cool completely before slicing.
