Steel-cut oats differ from old-fashioned rolled oats in that, instead of being rolled into flat flakes, the whole toasted oat grain is simply cut into chunks. When cooked, steel-cut oats maintain a chewier texture, but nutritionally, the two types are nearly identical.

Step 1
1. In a medium saucepan, bring the water to a boil. Stir in the oats and salt, and then reduce the heat to low. Simmer, uncovered, stirring occasionally, until the oats are tender, 20 to 25 minutes.

2. Stir in the pumpkin, applesauce, cinnamon, cloves, and nutmeg and cook, stirring, for another 5 minutes.

3. Transfer the oatmeal to a serving bowl, stir in the milk, and sprinkle the nuts on top, if using. Serve hot.
