Step 1
01 Sauté vegetables in a skillet over medium low heat until potatoes begin to soften.

02 In a separate bowl, beat egg and egg whites.
Step 3
03 Spray muffin tins with non stick avocado oil spray. Divide sauteed vegetables evenly among muffin tins. Evenly pour egg mixture over vegetables in muffin tins.
Step 4
Bake at 375 degrees F for 15-17 minutes or until muffins have puffed and eggs are set. Remove and let cool for 10 minutes before removing from tins. Serve immediately or store in the refrigerator until meal time.
