Step 1
Preheat oven to 350. Chop red pepper, red onions, zucchini, broccoli, and eggplant and coat in olive oil, salt, pepper on tray. Bake for 20 minutes. Boil pot of water and cook pasta of choice for ten minutes, strain and toss with juice of one lemon, olive oil, salt, and pepper. Top with roasted veggies after removing from oven, feta, and chopped cucumber. Mix 2 Tbs Olive Oil, 2 Tbs White Vinegar, 1 Lemon, salt, pepper, and sautéed garlic and shallot for taste. Use as dressing over pasta.
