Baked pasta - cauliflower and sausage

Perfect for a meal with family and friends. You can bake it a day before so when your guest are on your door step it is going to be enough to warm it up for few minutes. This version is made with cauliflowers and sausage.

Step 1
Clean the cauliflower and remove the think white stem. Boil the cauliflower for 10 minutes in salty water. Once this time is passed, put it into a strainer and let it cool down.

Cook the type of paste you prefer in salty water. Do not overcook the pasta, it is better to put it into tue strainer and let it cool.

Crumble the sausage and warm up the olive oil in a large pan. Once the oil is hot, ease down the sawsage and roast it for 5 minutes stearing frequently.
Once the sausage starts browning, poor the white wine in the pan. Once the alcoholic part of the wine is evaporated add some salt and pepper and mix. Decrease now the heat to a medimum low temperature.

Ease down in the pan the cauliflower and cook it with the sausage for 10 minutes.

Once the sausage and cauliflower are ready, switch off your stove and put the pasta in the pan too. Add some grated parmesan and a spoon of besciamella then mix all the the ingredients for a couple of minutes.

Take a large and possibly high baking tray suitable for your oven and big enough to contain all the ingredients and ease down two spoon of besciamella sauce on the bottom. Put all the pasta now into the tray and cover it with the besciamella sauce. Finish the recipe with a good amount of grated parmesan on top of your pasta.

Warm up the oven and coon the pasta for 20/25 minutes. You should see a nice brown crispy color all over it.
