Step 1
Brown ground beef and onions together in a frying pan over medium/high heat. Add taco seasoning and stir until well coated. Remove from heat.
Step 2
Weigh the meat mixture and divide the weight by the number of servings
Step 3
Assemble each salad by piling up 2 cups lettuce, ¼ of the meat mixture, ¼ cup beans, ¼ cup corn, ¼ cup tomatoes, one tablespoon cheese, two tablespoons plain Greek yogurt and two tablespoons salsa. Garnish with green onions.
