Instructions

Step 1
Prep: Begin by cutting the heads off the bell peppers and de-coring the inside to make a hollow bell pepper. Chop up the red onion into slices or your preferred style. Peel and crush the garlic clove. Weight out the rice and place rice in a pan.
Step 2
Lightly oil a saucepan and begin to fry & brown off the turkey mince. Add in the onions and garlic to the turkey mince and let sizzle for 2-3 minutes. Once the garlic and onion release their flavours, add in the full tin of chopped tomatoes and let it simmer on low heat.
Step 3
Add in a pinch of salt to the saucepan and add in smoked paprika & all spice.
Step 4
Begin to bring the rice to a boil and cook according to packet instructions.
Step 5
Once the rice has cooked, strain and add to the turkey mince mixture.
Step 6
Let the full pan mixture thicken until it resembles a risotto texture.
Step 7
Stuff the peppers with the mixture, add a SPRINKLE of cheese, and top with parsley leaves.
